Morning Rejoice Blueberry Smoothie!

this delicious and filling smoothie will let you embrace the day that lies before you! rich in mind-empowering antioxidants and numerous other boosting nutrients, this deep purple drink will give you the energy and lust for life that we should always have upon our waking hour!



serves 1-2
ingredients:
1/4 cup frozen blueberries
tsp cinnamon
few drops vanilla extract
1 heaped tsp maple syrup or agave nectar
1 Tbsp LSA mix or flax seeds
2 tsp cocoa powder
small sprinkle of chilli powder
1 cup of soymilk (the amount can change on how thick you like your smoothies!)
few sprigs fresh mint (to taste)

now blend all these super tasty & healthy ingredients together

enjoy chilled
and be ready for your new day!

rosa's pan pizza

this unique pizza was inspired by our beautiful feline-loving friend, rosa! pan-fried, with a potato replacement for your traditional cheese-topped pizza, and with an array of delicious seasonings and veggies! the best ever!



ingredients
for the dough:
1 cup high grade flour
1 cup spelt flour
4 Tbsp olive oil
1 tsp sea salt
1/2 cup water
olive oil, to coat

for the toppings:
plum jam
tomato paste
3 small potatoes
1 red onion
1 bell pepper
a few jalapeno peppers
small handful basil
sprinkle of pepper


directions:
1. begin with the dough: mix all the ingredients together until a dough is formed. if it is too wet, add more flour, if too dry add more water. kneed for 5 minutes, adding a little more olive oil to make more elastic. form a nice, smooth ball
2. coat a surface with some flour & then using a rolling pin, roll out very large & quite thin. it will need to be large enough to cover your frying pan, with enough extra dough to form a little crust
3. heat some oil in the pan & also coat dough in olive oil again
4. now put in pan & fold over spare dough to make crust
5. then add your toppings: spread jam & tomato paste
6. grate potatoes & squeeze to get rid of excess water. put over pizza
7. finely chop onion, bell pepper & basil and top, along with the jalapeno peppers! to garnish, add a sprinkle of pepper & some hot sauce
8. after 10 or so minutes, put in the oven (175 C) to further cook for around 10-15 minutes

salivate over this brilliant pizza!
it is very delicious with some hummus or some rocket fuel or even some tomato sauce!

mama's miso soup

mama's making dinner tonight. and what a delicious meal she is preparing! a miso soup with tofu, seaweed, noodles and some veggies. yummy, mama!



ingredients:
around 8 cups water
2 Tbsp tamari
a rough cup of dark leafy greens of your choosing
1 cup dried shiitake mushrooms
2 medium carrots
3 cloves garlic
1 spring onion
1 pack udon noodles (200 grams)
3 large sheets seaweed
5 Tbsp miso paste
1 pack silken tofu (300 grams)

directions:
1. heat up water & throw in tamari
2. roughly chop green leafy vegetable, and also cut carrots into "matchsticks" & throw these in to boil
3. grind up or finely chop your garlic and add this in!
4. break up (mama sliced with scissors) seaweed and add, as well as mushrooms
5. cut tofu into mini pieces and toss in
6. now add in your noodles
7. let boil for around 10 minutes & then add in finely chopped spring onions

serve steaming and eat with those you love

Camel's Couscous

an incredible dish from the distant lands of morocco! our childhood friend ciara was the inspiration for tonight's meal. after she talked about her mother maeve's wonderous moroccan couscous dish, we knew we had to try it out for ourselves! and oh how our tongues rejoiced!



serves 6 hardy portions

ingredients:
you will need couscous for 6 people!
&
3 veggie stock cubes in some water
1 large red onion
4 cloves medium-sized garlic
1 red capsicum
1 small carrot
1 tomato
handful raisins
2 cans chickpeas
generous sprinkle of pepper
1 tsp ginger powder
1 tsp coriander
1 tsp turmeric
1 tsp cumin
1 tsp cinnamon
juice of half a lemon

directions:
1. heat up stock & saute onion and garlic (both finely chopped) for 5 minutes
2. dice the rest of your veggies, except carrot, which is lovely grated! add to onion mix
3. add in couscous, pouring in water accordingly so this super grain can absorb the liquid!
4. toss in your raisins and all your superb flavourings from the spices and lemon juice
5. cook together until couscous in fully softened

indulge in the warm and spiced flavours of this dish!
we served with a side of hummus & hot sauce

pink pussy white bean dip with curried bread fingers

here is a delicious feline-inspired snack! 


for dip:

ingredients:

1 can of white beans (or you can use dried ones and soak them overnight)
1 small beetroot
a splash or two of sweet chili sauce
3 Tbsp tahini
1 tsp of agave nectar (or any desired sweetener)
a splash of tamari soy sauce 
1 tsp of olive oil

directions:

1. drain the brine out of the can of white beans and rinse 
2. grate the beetroot
3. then combine all ingredients in a food processor (you can use a slender blender or even a fork if you dont  have a processor) 
4. do so until smooth or whichever consistency you like

adorn with some pumpkin seeds and a little more oil

bread:
(this is a recipe we got from our awesome friend tilly that we added curry powder to<3)

ingredients:

2 tsp of brown sugar
1/2 cup of hot water
1/2 cup of cold water
3 cups of flour (although white flour was used for this bread, wholemeal works really nicely too)
half a teaspoon of yeast
1 tsp of baking powder
pinch of sea salt
dash of mixed dried herbs
sprinkle of lemon pepper
pinch curry powder

directions:

1. whisk the brown sugar and hot water together
2. gradually adding in the cold water, flour, yeast and baking powder as you whisk
3. then knead in the sea salt, herbs, lemon pepper, and curry powder
4. this recipe requires no setting of the dough! so as soon as its a nice mixture of dry and wet, pour it into a bread tin
5. sprinkle some more dried herbs on top
6.  put it in the oven at 200 C
7. and 15-20 minutes later take it out!
8. allow bread to cool for a few minutes if you can resist the urge to commence eating immediately
cut into strips

then add it to your bean dip, and serve with whatever else you like
here we used pan fried onions and garlic with olives

Go Nuts Donuts!

today is our dear friend ruby's birthday! so in celebration we are making these adorable palm-sized donuts!



note: these do require a donut-maker, unless you have any inventive alternatives. we haven't tried it, but you could get very creative... perhaps pan-fry them & then cut out the centre holes?



ingredients
for the dough:
1/2 cup high grade flour
1/2 spelt flour
1/2 dark cane sugar
pinch sea salt
1 tsp nutmeg
1 tsp cinnamon
2/3 cup soy milk
1 tsp apple cider vinegar
1 tsp vanilla extract
1 tsp caramel essence
2 Tbsp margarine
1 "egg"

to top:
sprinkles, to adorn
cinnamon + raw sugar
icing sugar + cocoa + water

directions:
1. preheat donut maker
2. combine all the ingredients for the dough in a large bowl, forming a thickish, sticky batter
3. cook for around 7 minutes, until a homely gold hue!
4. now for the toppings: either mix in a sugar-cinnamon combo
5. OR heat up a mix of cocoa, icing sugar, and a little water until a slightly thick sauce is created. dip the donuts in this & then cover with 100s and 1000s!

we enjoyed these with some deliciously sweet strawberries!
